From the feeding ratio and your kitchen’s temperature: every 10°F colder roughly doubles the time. The app shows a range, and once you tap “It peaked” a few times it learns how fast YOUR starter is.
Every starter has its own speed. Tap “It peaked” when it does — the next estimate uses it. Rye and whole-wheat feeds are faster, all-purpose flour a little slower.
Both, always. Pick the one you measure with in Settings and it is shown first; the other is right beside it. Grams are more exact, so a scale helps — but cups work.
